To ensure the safe handling of the pastries, they must thaw at a temperature between 65°F and 75°F (18°C to 24°C). They must remain wrapped while thawing so that condensation forms on the wrapper rather than making the pastry soggy. 
Once thawed they should not be placed in the freezer or refrigeration.
